Common Mallow Marshmallows

Using "weeds" in our garden we made all natural, marshmallows with only four ingredients! 

First, I located said weed, the Common Mallow, which until now I had dreaded as it was everywhere in the garden...

Once I had collected enough 'peas'(about 1/2c.), I washed and boiled with 1/4c. sugar and enough water to cover them all. I boiled until there was about 1/4c. of yellowish, sticky and thick pea water.  Then I strained the liquid from the peas into a medium bowl.

After what felt like forever whipping the liquid with 1 egg white and 1/4tsp Cream of Tartar, stiff peaks formed. Then I plopped them onto a baking sheet and cooked at 300 till a little golden.  And that was it!
